Colombian food changes a lot by region. A dish that feels normal in Bogotá may not be the everyday food in Cartagena, Cali, Medellín, Santander, or the Coffee Axis.
Colombia Travel highlights dishes like ajiaco bogotano and bandeja paisa as famous foods best understood in their places of origin.
When posting food questions, include the city or region:
Bogotá: ajiaco, changua, tamales, chocolate with cheese
Antioquia/Medellín: bandeja paisa, arepas, mondongo
Caribbean coast: coconut rice, fish, patacones, arepa de huevo
